Finally got the new rubbers on! The old tires were so old they seem to have hermetically sealed the tubes in the rim. Not sure of their age, but the tubes are in great shape so I reused them. Not entirely stoked with my tire choice (27" Panaracer Pasela's... meh), but I decided to stick with gumwalls for the stock "look". Definitely looks and feels much better. Now I just need my saddle to get here so I can get back on the road again!
