I have an older touring bike and I was considering making the change to V-brakes. When it comes to stop on a dime braking power the cantilever can't deliver.

If you have standard road brake levers (not shifters), you can replace them with v-brake compatible "aero levers" for $20, and pick up some Tektro v-brakes or about any v-brake, like old shimanos.
