Ensemble, agave Espadin, Largo, Tripon & Barril, clay distillation, 10 years rested in glass; wonderful. Interesting thing about agave-spirit aging in glass, individual flavor components become more distinct, complexity unfolds, and there is an overall softening of harsh edges. In contrast, barrel aging melds flavors and adds flavor components from the wood. Unlike agave, grain spirits remain unchanged when rested in glass.
