Easy meaning least bodily damage than trackstand or gatestart.
If by easy you mean least amount of skill needed I would say a wheelie.

I don't know about easiest trick, but I know a hard one. Almost everyone I know almost always has MAJOR problems staying upright going as slow as I do when I ride.
