The only tubeless rim that I see at Colorado Cyclist is the Stans and I think you have to use rim strips tape so that doesn't really sound what I'm looking for. I want to custom build a true tubeless wheel, w/out having to resort to stans tape and sealant.

I've had a pair of Dura Ace tubeless wheels now for 2 years and haven't had to use sealant at all, nor have I had any punctures, it's great.
