Bake legs for 45 mins in morning until medium well.
Pull legs out of oven and rest
Put legs back in oven and bake over 15% percent hill repeats for 60 mins.
Take legs out and rest for 14 hours
Put legs back in oven in the morning for MTB ride

Dunno man! Sounds like the recipe needs a tweak. @ 60 minutes might end up with some over cooked meat :D
